This white wine is produced from old vines of indigenous grape varieties, carefully cultivated on the sunny hillsides of Valais. Each grape variety is harvested separately, allowing for careful selection of grapes at perfect ripeness. After the harvest, the grapes are harvested separately before undergoing a pre-fermentation maceration. This step allows for maximum extraction of aromas and complexity.
